Why? I've done that an awful lot in the past and continue to do it
without feeling bad about it in the slightest. No software depends on
there being anything at the other end of these URIs and anything that
did got there would only be documentation for humans. That's a nice to
have, admittedly, but not a must have.
If you do feel there must be something there, why not link to a little
server-side script that displays a text along the lines of "the
subject identified by UNSPSC code <request parameter>"?

That's true, but for me creating new URN schemes for every vocabulary
is unbearable. You could resort to one of these

which is much better, but as they are not registered, not entirely
good, either. And what's wrong with a 404, anyway?
